 Strawberry Streusel Cake



Ingredients

75g butter 
70g sugar
3 eggs
Straweberry
45 g yougurt
5g vanilla 
8g baking powder
160g flour
1g salt


300g fresh strawberries
30g sugar
8g cornstarch
Zest from a lemon

85g all-purpose flour
Pinch of salt
56g butter 
50g brown sugar
1g ground cinnamon

PREPARATION

Preheat the oven to 180 and grease a 20cm pan.

In a medium bowl, combine brown sugar with all-purpose flour, salt, and cinnamon. Whisk to combine, then add butter with a fork until the mixture feels crumbly. Set the streusel aside.





Cut strawberries into small pieces and place them in a bowl. Add sugar, lemon zest, and cornstarch and toss to coat. 



In a bowl, whisk the flour with baking powder and salt.

In a mixing bowl, add the butter and sugar and mix to combine. Incorporate eggs one at a time. Add the yogurt and vanilla extract and mix to combine.


Gradually incorporate the flour mixture.













Pour the batter into the prepared baking dish.Spread strawberry filling on top, then sprinkle with streusel.

Bake for 40 minutes, then set aside for at least 20 minutes before serving.

If desired, dust with powdered sugar.
