Lemon Bars
Ingredients
250g all-purpose flour
100g sugar
3g salt
226g chilled butter
300g sugar
32g all-purpose flour
4 eggs
12g lemon zest
160g lemon juice
Powdered sugar
PREPARATION
Pre-heat the oven to 180°C.
In a mixing dish, combine the flour, sugar, and salt. Add the butter and, using a fork, cut it in until crumbles appear.
Using the back of a spoon, press the mixture into the bottom and along the corners of the prepared baking pan. Bake for approximately 20 minutes. Set aside to cool somewhat.
In the meantime, make the filling. In a mixing basin, combine the sugar and flour. Whisk in the eggs, then add the lemon zest and juice.
Bake for another 20 minutes, or until the lemon filling is set, over the prepared crust.
Allow to cool entirely at room temperature before serving, and if feasible, refrigerate for a couple of hours.
Sift powdered sugar over the top.
