Carrot Muffins 🥕
Excellent recipe for carrot muffins. Really delicious and nourishing! Below you will find the complete recipe how to cook it step by step.
First method :
INGREDIENTS for Carrot Muffins
*300 g (2 cups) unbleached all-purpose flour
*315 g (1 1/2 cups) brown sugar
*100 g (1 cup) quick-cooking oatmeal
*70 g (1/2 cup) raisins
*10 ml (2 tsp.) Baking powder
*1/2 teaspoon (2.5 ml) ground ginger
*1/4 teaspoon (1 ml) ground cinnamon
*1 pinch of salt
*1/2 cup (125 ml) vegetable oil
*1/2 cup (125 ml) carrot juice
*2 eggs
*5 ml (1 tsp.) Vanilla extract
*165 g (1 1/2 cups) grated carrots
PREPERATION for Carrot Muffins
Place the grill in the oven's center. Preheat the oven to 180 degrees Celsius . Line 12 muffin cups with paper boxes or oil them.
Combine all of the dry ingredients in a large mixing basin. Add the grated carrots.
In another bowl, whisk together the oil, carrot juice, eggs and vanilla. Add to the dry ingredients and mix gently with a spatula until the mixture is barely wet. Divide the dough into the molds.
Bake until a toothpick inserted in the middle of a muffin comes out clean, about 25 minutes. Allow to cool. Remove the cake from the mold and place it on a wire rack to cool.

The Second method :
Ingredients for carrot muffins
-140 gr flour,
-1/4 tsp salt
-1/8 tsp cloves
-1 + 12 tsp baking powder
-1 tsp cinnamon
-100 gr brown sugar
-100 gr regular sugar
-2 eggs
-1/2 cup oil
-1 tsp vanilla
-180 gr carrots (3 medium )
-1/2 cup of walnuts
-1/2 cup of coconut flakes or coconut flour
PREPERATION for Carrot Muffins
1.Chop the carrot into small pieces
2.In a large bowl mix together flour, baking powder, salt, cinnamon, and cloves.
In another bowl beat together eggs , granulated sugar and brown sugar until light and fluffy.
Then gradually add the oil and slowly beat combined and add the vanilla extract.
3.Add the chopped carrots ,fold in flour mixture just until combined. Don't over mix. Fold in nuts and shredded coconut.
4. Fill each liner 3/4 full with batter .
Bake in 180C for 15-20 min
